What you will do?
- Oversee daily operations, ensuring high-volume production meets quality standards for events and daily service
- Deliver the highest of quality in pastry and producing showpiece desserts for special events
- Support food safety protocols and maintain HACCP accreditation standards
- Manage departmental budgets, controlling food costs, and coordinating with suppliers to source high-quality ingredients
- Collaborate with the Executive Pastry Chef, Executive Chef and General Manager on menu development, addressing guest feedback, and resolving service-related issues
- Lead kitchen operations, including menu development and preparation, cooking according to standards, and ensuring consistent quality and service standards, while fostering team development and motivation
More about you
- Proven experience managing a pastry operation in a high-volume or premium restaurant environment
- Strong business acumen to drive operational efficiency and profitability
- Expertise in ordering and inventory management, including cost controls and invoice processing
- Background in menu planning and design to elevate culinary offerings
- Strong leadership skills with the ability to develop, manage, and motivate a diverse pastry team
- Formal qualifications in Patisserie, Commercial Cookery, or equivalent
- Proficiency in business technology, including stock control systems, spreadsheets, and accounting software, is preferred
