ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high-quality meals that support the wellbeing of Australian Defence Force personnel.

We are seeking motivated and reliable Cooks and Chefs to join our team at Blamey Barracks, Kapooka. These full-time opportunities are ideal for candidates with commercial kitchen or catering experience looking for stable employment and long-term career growth within a supportive team environment.

KEY RESPONSIBILITIES

Prepare high-quality meals in a bulk cooking environment
Maintain food safety, hygiene and HACCP standards
Support stock control, deliveries and kitchen operations
Ensure food quality, presentation and portion control
Work collaboratively as part of a professional kitchen team
Support meal services during busy operational periods

SKILLS AND EXPERIENCE

For Chef Applicants

Certificate III in Commercial Cookery
Experience in commercial kitchens, catering or bulk food production
Strong knowledge of HACCP, food safety and allergen management

For Cook Applicants

Relevant cooking experience in a commercial kitchen or catering environment
Understanding of food safety and hygiene practices
Ability to work efficiently in a fast-paced kitchen environment

For All Applicants

Strong attention to detail and organisational skills
Reliable, team-focused and committed to quality service
Ability to obtain and maintain a National Police Check
