Your Role

This position is responsible for delivering consistently highquality food production while upholding Hamilton Island's culinary standards and guest experience expectations. You will work collaboratively within the kitchen team to ensure smooth service, food safety compliance, and operational excellence.

Where you'll make an impact

  • Producing food according to production requirements, ensuring correct cooking methods, consistency, and quality to achieve high guest satisfaction.
  • Supervising Apprentice Chefs and ensuring all procedures, food production, and hygiene standards meet HIE expectations.
  • Rectifying and reporting any activity that poses a health or safety risk.
  • Communicating with Kitchen Stewards to maintain par levels of equipment throughout service.
  • Processing food requisitions in accordance with par stock levels.
  • Handling, storing, preparing, and disposing of food in line with Australian Food Safety Standards.
  • Supporting Food Safe compliance, including temperature recording and cleaning checklists.
  • Participating in departmental training programs.
  • Contributing positively to team effectiveness.
  • Following all HIE Work Health & Safety policies and procedures.

What we're looking for

You are a wellpresented, enthusiastic and reliable culinary professional who thrives in a fastpaced kitchen environment and enjoys working as part of a team.

To be successful, you will need:

  • Certificate III in Commercial Cookery or equivalent (Essential)
  • Minimum one year experience as a Commis Chef in an international hotel, restaurant, or reputable commercial kitchen (Essential)
  • Experience in volume production (Desirable)
  • Excellent communication and interpersonal skills
  • A friendly, positive attitude and flexible approach
