We're seeking an experienced Chef Supervisor at Northern Heritage Motel, Cairns. This is a hands-on leadership role in a structured Defence environment, ideal for a confident chef who enjoys leading teams, delivering quality food, and maintaining high operational standards. You'll be supported by an established team and backed by Compass systems, training and ongoing development.
The Position
Lead and support a kitchen team to deliver high-quality daily meals and functions
Oversee catering operations, including food safety, stock control, and compliance with OH&S and HACCP standards
Manage menu execution, food forecasting, ordering, and waste minimisation
Ensure strong allergen management and compliance with dietary requirements
The Person
Certificate III in Commercial Cookery (minimum)
Proven experience in a Head Chef or Chef Supervisor role within a high-volume or structured environment
A confident, calm leader with experience training and developing teams
Strong knowledge of HACCP, food safety, and allergen management
Well organised, proactive, and able to manage competing priorities
