Purpose
As Chef de Partie, you will play a key role in delivering consistent, high-quality food across multiple outlets. Working closely with the wider kitchen brigade, you will contribute to service delivery, team development, and the ongoing evolution of our food offering.
Primary Responsibilities
- Manage your section efficiently across varying service styles and outlets
- Support service across Republic Tavern, Trader Restaurant, and Conference & Events as operationally required
- Take ownership at the pass when required, ensuring quality, consistency, and timely service
- Maintain strong control of food cost, waste management, and labour within your section
- Deliver consistently high-quality, well-presented dishes aligned with brand and venue standards
- Train, mentor, and support junior team members across the kitchen brigade
- Maintain a clean, safe, and compliant kitchen environment with a strong focus on food safety
Skills & Experience
- Previous experience as a Demi Chef or Chef de Partie in a professional kitchen
- Experience working across multiple service styles or high-volume environments highly regarded
- Strong understanding of HACCP, food safety, and compliance standards
- A leadership mindset with a passion for developing junior chefs
- Certificate in Commercial Cookery (required) and Food Safety certification (preferred)
- Strong organisational and time management skills across prep, service, and cost control
- Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays
